Red Curry Shrimp Flatbread with Riverbench Pinot Noir Rose

I Love Thai Food. Love it. And I’m a pizza freak, always trying to come up with something new. I adore a nice dry rosé to compliment the sweet and spicy flavors of this delicious combo of shrimp, coconut, and chiles. This flatbread pizza is definitely one that requires a knife and fork, but it’s absolutely delicious and a dead on pairing with our brand new rosé of Pinot Noir. Fresh shrimp work best, but frozen are absolutely fine, too. You can vary the toppings depending on what you like- this pizza would be just as good with beef, pork, chicken, and other veggies.

• 1 premade pizza crust
• 1 tsp. olive oil
• ½ pound fresh shimp, cut into segments if large
• 4 cloves of garlic, minced
• 1 tbsp. fresh lemongrass or lime zest
• ½ cup light coconut milk
• 1 tsp. fish sauce
• 1 tsp. soy sauce
• ¾ tbsp. red curry paste
• 1 tsp. fried rice seasoning
• 1 tsp. red chile paste (you can omit this if you don’t like things too spicy!)
• 1 red bell pepper, thinly sliced
• 1 small can bamboo shoots
• 2 tbsp. unsweetened shredded coconut

Set over to 450 degrees. Roll out your pizza crust and fit into a nonstick pizza pan. Bake the crust for 6 minutes or until lightly browned.

In a medium skillet, heat the olive oil on medium heat. Cook for 1 minute, then add minced garlic. Cook, stirring constantly, for 1 more minute until the garlic is softened, then remove from heat. Put shrimp mixture into a bowl and stir in lemongrass or lime zest.

In the same skillet (no need to clean it out!) add the coconut milk and bring to a simmer. Add the fish sauce, soy sauce, red curry paste, and fried rice seasoning, whisking to blend. Taste if you like, then add the red chile paste, whisking to combine. Simmer mixture for another 2 minutes, or until slightly thickened and reduced.

Once the crust has been baked, spread about half of the coconut milk mixture evenly across. Top with bell pepper, bamboo shoots, and shrimp mixture. Drizzle the remaining coconut milk mixture on top. Finish with the coconut.

Bake in the oven another 5 minutes until hot. The pizza will still be a little wet, but absolutely delicious! Enjoy!
